النقاط الحرجةCritical control points

ليست كل خطوة حرجة. الخطوة التي يمكن عندها منع الخطر أو تقليله إلى مستوى مقبول هي النقطة الحرجة، وتحديدها بدقة يمنع تضخيم النظام.Not every step is critical. A step where a hazard can be prevented or reduced to an acceptable level is a critical point, and precise identification prevents bloating the system.

الحدود والمراقبةLimits and monitoring

لكل نقطة حرجة حد قابل للقياس، ومراقبة منتظمة، وإجراء تصحيحي عند التجاوز. الحد غير المقيس لا يُعد ضابطاً.Each critical point needs a measurable limit, regular monitoring and a corrective action on breach. An unmeasured limit is not a control.

النظافة والتدريبHygiene and training

برامج النظافة والتدريب يجب أن تكون موثقة ومطبقة. الشهادات التدريبية بلا سلوك ملاحظ في الموقع لا قيمة لها.Hygiene and training programmes must be documented and applied. Training certificates without observable site behaviour have no value.
